Grilled pineapple ice cream sundaes are a delicious way to celebrate summer. Sweet bourbon-soaked pineapple, buttery angel food cake and mounds of vanilla ice cream come together in this irresistible no-bake dessert. Set out a pineapple ice cream sundae station at your next barbecue!  We’re grilling everything this summer, dessert included. From the caramelized sugars of the pineapple to the perfectly toasted angel food cake, grilling imparts a sweet and smoky flavor on this addictive warm-weather treat. We stacked grilled angel food cake with caramelized grilled pineapple and a few scoops of cool and creamy vanilla ice cream, then topped it all with a drizzle of caramel sauce and a Maraschino cherry. A perfect tropical summer sundae!

  • 1 pineapple
  • 1/2 cup bourbon or ginger ale (optional)
  • 1 angel food cake loaf, sliced
  • 1/2 stick butter, softened
  • 1/2 cup brown sugar
  • Vanilla ice cream
  • Caramel sauce
  • Maraschino cherries

Directions

  1. With a GoodCook Pineapple Tool, peel core and slice pineapple
  2. Place pineapple slices in a resealable plastic container, drizzle with bourbon or ginger ale. Marinate for at least 1 hour, and up to overnight.
  3. Grill pineapple on outdoor or cast iron grill until edges begin to caramelize.
  4. Spread butter on both sides of the angel food cake slices, grill just until light and golden.
  5. Serve angel food cake topped with pineapple and ice cream. Drizzle with caramel sauce and serve with a maraschino cherry on top.
