One-Pot Veggie Mac is a creamy, cheesy one-pot meal that’s perfect for a weeknight dinner. It’s comfort food the healthy way, loaded with fresh veggies, pasta, and a kid-friendly cheese sauce. Easy to make and easy to clean up, this One Pot Veggie Mac recipe is a lifesaver!

We all grew up on mac and cheese, and it’s still a comfort food favorite. This One Pot Veggie Mac upgrades the classic, adding in a rainbow of colorful veggies and switching up the sauce – a coconut milk and cheese blend gives this cheesy sauce an irresistible nutty creaminess. And it all comes together in one pot, making everything easier. If you love simple, then this one-pot recipe is for you.

To make, the veggies are sauteed until aromatic and slightly tender. Then broth, pasta, and cheese are tossed into the pot. Cover and stir every 2-3 minutes, and in the time it takes for the pasta to cook to al dente, this delish dish will be done!

One of the things that make One-Pot Meals so wonderful is how versatile they are. If some of the veggies in this recipe aren’t family favorites, feel free to swap for others you like better. Asparagus, corn, and peas would all make for awesome variations. Or cook up the diced chicken before sauteeing the veggies. Stir in bacon bits. Or sub-Monterey jack for cheddar, and add a can of tuna for a tasty Tuna Mac. As long as the pasta-to-liquids ratio remains the same, you’ll end up with a killer meal.

One-pan perfection

It all comes together with a GoodCook Deep-Sided Sauté Pan, perfect for corralling all the veggies and pasta in one pot. You’ll also need a GoodCook Touch Wooden Basting Spoon for stirring and a sharp knife for dicing, and the GoodCook Touch Carbon Steel Chef’s Knife is perfect for the job. Now you’re ready to cozy up to a bowl of this healthy and delicious One Pot Veggie Mac!
